These articles attempt to demystify the world of perfumery and provide insights into some of the most popular scents. But we were startled to find we had never covered Cherry, despite it being a fragrance note that seems to be permanently in demand.

So here, after a clearly far too long, is our take on cherry fragrances and what makes them so appealing.

Cherry Fragrances – The Journey from Niche to Mass Appeal

Few fragrance notes have captured the imagination of perfume lovers quite like cherry, but cherry wasn’t always the crowd-pleasing favourite of the masses.

Once considered a niche gourmand accord associated with sweet body sprays and confectionery scents, cherry has undergone a remarkable transformation. Today, it appears in some of the most coveted luxury fragrances, balancing sweetness with darkness, sensuality and sophistication.

But what makes a perfume smell like cherry? Why are consumers so drawn to it? And how did cherry become such a sought-after note?

The Fragrances That Sparked the Cherry Craze

Cherry has appeared sporadically in fragrance for much of the twentieth century, but it was often used as a supporting note rather than a star ingredient. Cherry was considered difficult to execute because it could easily veer into cough syrup territory if handled poorly.

Advances in aroma chemistry allowed perfumers to create more nuanced cherry accords with greater realism and complexity. As gourmand perfumery exploded in popularity during the 1990s and 2000s, the groundwork was laid for cherry’s eventual breakthrough.

This fragrance transformed perceptions of cherry, presenting it not as candy-like or youthful, but as decadent, boozy and luxurious. It demonstrated that cherry could be luxurious, adult, and fashion-forward. Notes of black cherry, almond, tonka bean, and liqueur created an intoxicating scent profile that quickly became one of the most talked-about launches in modern perfumery.

Today, cherry has become one of the defining fruity notes of contemporary perfumery, joining vanilla, saffron, and oud as ingredients that have shaped fragrance trends over the past decade.

What Makes Something Smell Like Cherry?

There is no “cherry essential oil” for use in perfumery. As a result, the scent is created by a combination of fragrant materials, including Benzaldehyde, Heliotropin, fruity esters, Ionones and Coumarin.  

Instead, perfumers build a cherry accord using a combination of natural and synthetic materials.

Benzaldehyde: The Heart of Cherry

The single most important material in creating a cherry effect is benzaldehyde.

Interestingly, benzaldehyde naturally occurs in bitter almonds, apricot kernels, peach pits, and cherry stones. It has a distinctive aroma that immediately evokes maraschino cherries, almond extract, and cherry liqueur. If you’ve ever smelled almond essence while baking and thought of cherries, that’s benzaldehyde at work.

Gourmand Materials

Vanilla, tonka bean, praline, and balsamic notes frequently appear alongside cherry because they enhance the fruit’s natural sweetness and create the sensation of cherry desserts, pastries, and liqueurs.

For the cherry notes, we also use red fruit and violet nuances. Raspberry synthetics, fruity butyrates, or ionones contribute towards fruity and violet facets, making cherry profiles richer, more rounded, and more sophisticated.

Woods, Leather, and Smoke

One of the reasons modern cherry fragrances feel so sophisticated is the addition of darker materials such as:

  • Leather accords
  • Guaiac wood
  • Cedarwood
  • Palo santo
  • Tobacco notes

These ingredients contrast with the fruitiness and create the “dark cherry” effect that has become especially popular.
